Māori preserved large quantities of food, to save for leaner times or to trade with other tribes. Food could be dried in embers or, in the geothermal Rotorua area, spread on hot rocks.


7. In your own words, explain how to build a hangi.

→ dig a pit big enough for the kai food Build a fire in the bottom of the pit using hardwood pile volcanic rocks on top of the wood, set the fire alight and leave it to burn. Once the fire has burnt out the rocks  should be white hot. Prepare the food, place food in the hangi meat at the bottom and vegetables on top cover the food with wet cloths and dirt. After 3 hours uncover the hangi and remove the food last but not least enjoy your kai.
